Ingredients

1 ripe mango, peeled and diced

1 medium-sized dragon fruit, peeled and diced (reserve some for garnish)

2 cups water

1/2 cup fresh lemon juice (about 4-5 lemons)

1/4 cup honey or agave syrup (adjust to taste)

1/4 teaspoon fresh mint, finely chopped (optional)

Ice cubes

Mint leaves and dragon fruit cubes for garnish

Instructions

In a blender, combine the diced mango, diced dragon fruit, and 1 cup of water. Blend until smooth and creamy.

Strain the blended mixture through a fine-mesh sieve into a pitcher to remove any pulp, pushing it down with a spatula to extract all the juice.

Add the fresh lemon juice and honey/agave syrup to the juice mixture. Stir well until the sweetener is fully dissolved.

Pour in the remaining 1 cup of water to dilute the mixture as desired. Taste and adjust sweetness if necessary.

If you're using fresh mint, add it to the mixture and stir gently.

Chill the lemonade in the refrigerator for at least 30 minutes, or until cold.

To serve, fill glasses with ice cubes, then pour the mango dragon fruit lemonade over the ice.

Garnish each glass with fresh mint leaves and small cubes of dragon fruit.
