2 large russet potatoes, peeled and grated

1 cup shredded cheddar cheese

1/2 cup cooked bacon, crumbled

1/4 cup green onions, finely chopped

1/2 cup all-purpose flour

1 teaspoon baking powder

2 large eggs

1/4 cup milk

1 teaspoon garlic powder

Salt and pepper to taste

Olive oil spray (for the waffle maker)

Begin by preheating your waffle maker according to the manufacturer's instructions.

    In a large mixing bowl, combine the grated potatoes, cheddar cheese, crumbled bacon, and chopped green onions. Mix well.

      In a separate bowl, whisk together the flour, baking powder, garlic powder, salt, and pepper.

        Add the eggs and milk to the dry ingredients, whisking until smooth.

          Gently fold the wet mixture into the potato and cheese mixture until just combined, ensuring not to overmix.
