Ingredients

2 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon salt

1/2 cup cold unsalted butter, cubed

3/4 cup buttermilk (or milk with 1 tablespoon of lemon juice added)

1 tablespoon honey

1/2 teaspoon baking soda

Optional: Fresh herbs (like chives or rosemary) for added flavor

Instructions

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

In a large mixing bowl, whisk together the flour, baking powder, salt, and baking soda until well combined.

Add the cold cubed butter to the flour mixture. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs with small pea-sized pieces of butter still visible.

In a separate bowl, mix the buttermilk and honey together.

Create a well in the center of the flour mixture and pour in the buttermilk mixture. If you’re using fresh herbs, add them here. Stir gently with a spatula until just combined. Be careful not to overmix; the dough should be slightly sticky.

Turn the dough out onto a floured surface. Pat it down gently into a 1-inch thick rectangle. Fold the dough over itself three times to create layers (this helps achieve the flaky texture).

Use a biscuit cutter or a drinking glass to cut out biscuits from the dough, pressing straight down without twisting. Place them on the prepared baking sheet close together.

Bake for 12-15 minutes or until the tops are golden brown and the biscuits have risen nicely.

Remove from the oven and let them cool for a few minutes before serving.

Prep Time: 15 minutes | Total Time: 30 minutes | Servings: 10 biscuits

                      - Presentation Tips: Serve warm, brushed with a little melted butter on top, and garnish with additional fresh herbs if desired. Enjoy with your favorite jam or as a side to soups and salads!
