2 cups cooked white beans (cannellini or great northern)

4 cups vegetable broth

1 medium onion, diced

2 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)

Zest of 1 lemon

2 tablespoons lemon juice

1 teaspoon salt (to taste)

½ teaspoon black pepper (to taste)

2 tablespoons olive oil

In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery, and sauté for about 5-7 minutes, or until the vegetables have softened.
