Lemon Garlic Tuna Cakes

2 cans (5 oz each) tuna in water, drained

1 cup breadcrumbs (preferably panko)

2 large eggs

2 tablespoons mayonnaise

2 tablespoons Dijon mustard

2 cloves garlic, minced

Zest of 1 lemon

2 tablespoons freshly squeezed lemon juice

1 small red onion, finely diced

2 tablespoons fresh parsley, chopped

1 teaspoon Old Bay seasoning (optional)

Salt and pepper to taste

Olive oil for frying

In a large mixing bowl, combine the drained tuna, breadcrumbs, eggs, mayonnaise, Dijon mustard, minced garlic, lemon zest, lemon juice, red onion, parsley, and Old Bay seasoning (if using).

    Season the mixture generously with salt and pepper.

      Gently mix all ingredients until well combined, being careful not to break up the tuna too much.

        Shape the mixture into patties, about 2 inches in diameter and 1 inch thick. You should get around 8-10 patties.

          Heat a large skillet over medium-high heat and add a generous drizzle of olive oil.

            Once the oil is hot, carefully place the patties in the skillet, cooking in batches if necessary to avoid overcrowding.

              Fry each patty for about 4-5 minutes on each side, or until they are golden brown and cooked through.

                Remove the patties from the skillet and place them on a plate lined with paper towels to absorb any excess oil.

                  Serve warm with an extra squeeze of fresh lemon on top, if desired.
