1 lb (450g) boneless chicken breast, cut into bite-sized pieces

3 tablespoons olive oil

4 cloves garlic, minced

Zest of 1 lemon

Juice of 1 lemon

1 teaspoon dried oregano

1 teaspoon paprika

Salt and pepper to taste

Fresh parsley for garnish

Lemon wedges for serving

Instructions
 

In a large mixing bowl, combine the cubed chicken, olive oil, minced garlic, lemon zest, lemon juice, dried oregano, paprika, salt, and pepper.

    Toss the chicken until all pieces are well coated with the marinade. Cover and let it marinate in the refrigerator for at least 30 minutes.

      In a large skillet over medium-high heat, add a drizzle of olive oil. Once hot, add the marinated chicken bites to the skillet.

        Sauté the chicken bites for about 5-7 minutes, stirring occasionally, until they are golden brown and cooked through, turning them for even cooking.

          Once cooked, remove from heat and let them sit for a minute.

            Garnish with freshly chopped parsley and serve with lemon wedges on the side.
