Lemon Garlic Asparagus

1 lb fresh asparagus, trimmed

3 tablespoons olive oil

3 cloves garlic, minced

Zest and juice of 1 lemon

1 teaspoon red pepper flakes (adjust to taste)

Salt and pepper to taste

2 tablespoons grated Parmesan cheese (optional)

Fresh parsley, chopped for garnish

Instructions
 

Preheat your oven to 425°F (220°C).

    Place the trimmed asparagus on a large baking sheet.

      In a small bowl, whisk together the olive oil, minced garlic, lemon zest, lemon juice, red pepper flakes, salt, and pepper.

        Pour the garlic and lemon mixture over the asparagus and toss until evenly coated.

          Spread the asparagus in a single layer on the baking sheet for even roasting.

            Roast in the preheated oven for 12-15 minutes, or until the asparagus is tender and slightly crispy.

              If desired, sprinkle with Parmesan cheese in the last 2 minutes of roasting for a cheesy topping.

                Once done, remove from the oven and garnish with fresh parsley before serving.
