4 oz cream cheese, softened

1 large egg

1/2 teaspoon vanilla extract

Zest of 1 lemon

2 tablespoons fresh lemon juice

1/4 cup buttermilk

Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly to prevent sticking.

      In another bowl, beat the softened butter and cream cheese together until smooth and creamy using a hand mixer or paddle attachment.

          Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk. Mix until just combined; do not overmix.

              Bake in the preheated oven for 18-20 minutes or until a toothpick inserted in the center comes out clean.
