Ingredients

1 cup all-purpose flour

1 cup cake flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1/2 cup sour cream

Zest of 2 lemons

1/4 cup fresh lemon juice

4 ounces cream cheese, softened and cubed

Optional: powdered sugar for dusting

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.

Whisk Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, cake flour, baking powder, baking soda, and salt until well combined. Set aside.

Cream Butter and Sugar: In a large mixing bowl, beat the softened butter and granulated sugar together with an electric mixer on medium speed until light and fluffy (about 3-4 minutes).

Add Eggs and Flavorings: Add the eggs one at a time, mixing well after each addition. Then, add the vanilla extract, sour cream, lemon zest, and lemon juice, mixing until smooth.

Combine Wet and Dry Ingredients: Gradually fold the dry ingredients into the wet mixture until just combined. Be careful not to overmix.

Prepare Cream Cheese Morsels: Gently fold in the cubed cream cheese, ensuring they are evenly distributed but still noticeable within the batter.

Fill Muffin Liners: Divide the batter evenly among the muffin liners, filling each about 2/3 full.

Bake: Bake in the preheated oven for 18-22 minutes, or until the muffins are golden brown and a toothpick inserted in the center comes out clean.

Cool: Allow the muffins to cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.

Optional Dusting: For extra sweetness, dust the cooled muffins with powdered sugar before serving.

Prep Time: 15 mins | Total Time: 40 mins | Servings: 12 muffins

                        - Presentation Tips: Arrange the muffins on a decorative platter and garnish with fresh lemon slices or edible flowers for a festive touch, especially for Easter or spring gatherings. Enjoy!
