Ingredients

1 pre-made pie crust (9-inch)

3 large eggs

1 1/2 cups granulated sugar

1/4 cup unsalted butter, melted

1/4 cup fresh lemon juice (about 2 lemons)

Zest from 1 lemon

2 tablespoons all-purpose flour

1/4 teaspoon salt

Optional: Powdered sugar for dusting

Instructions

Preheat your oven to 350°F (175°C). Place the pie crust in a 9-inch pie dish and set aside.

In a large mixing bowl, whisk the eggs until frothy and well combined.

Gradually add the granulated sugar to the eggs, whisking continuously until the mixture is smooth and creamy.

Stir in the melted butter, fresh lemon juice, and lemon zest, mixing until evenly incorporated.

Sprinkle the flour and salt into the mixture, stirring gently just until the flour is fully absorbed—do not overmix.

Pour the lemon mixture into the prepared pie crust, spreading it evenly.

Bake in the preheated oven for 30-35 minutes or until the edges are firm and the center is slightly jiggly (it will set while cooling).

Once done, remove the pie from the oven and allow it to cool at room temperature for about 1 hour.

For serving, dust the top lightly with powdered sugar, if desired, before slicing.
