1 cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

2 cups all-purpose flour

1 teaspoon baking powder

1/4 teaspoon salt

Zest of 2 lemons

1/4 cup fresh lemon juice

1 cup powdered sugar (for dusting)

Instructions
 

Preheat your oven to 350°F (175°C) and line a 9x13 inch baking pan with parchment paper, leaving some overhang on the sides for easy removal later.

    In a large mixing bowl, cream together the softened butter and granulated sugar using an electric mixer on medium speed until light and fluffy, about 2-3 minutes.

      Add the eggs, lemon zest, and lemon juice, mixing until well incorporated.

        In another bowl, whisk together the flour, baking powder, and salt.

          Gradually add the dry ingredients to the wet mixture, mixing until just combined and a soft dough forms.

            Spread the dough evenly into the prepared baking pan, smoothing the top with a spatula.

              Bake in the preheated oven for 20-25 minutes, or until the edges are lightly golden and a toothpick inserted in the center comes out clean.

                Remove from the oven and allow to cool in the pan on a wire rack for about 15 minutes, then use the parchment overhang to lift the bars out of the pan and continue cooling on the rack.

                  Once cooled completely, dust the top with powdered sugar before slicing into squares or bars.
