2 tbsp granulated sugar

¼ cup cold water

½ cup chocolate chips (milk or dark chocolate)

½ cup hazelnuts (chopped)

1 egg (beaten, for egg wash)

Prepare the Dough: In a large mixing bowl, combine the flour, salt, and sugar. Add the cold butter cubes and use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.

    Form the Dough: Gradually add the cold water, mixing until the dough just comes together. Avoid overworking it. Shape the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.

      Prepare the Layers: Once chilled, roll the dough out on a lightly floured surface into a large rectangle about ¼ inch thick. Fold it into thirds like a letter. This creates the layers essential for a flaky croissant. Wrap it again and refrigerate for another 30 minutes.

        Repeat the Rolling: Roll out the dough again into a rectangle and fold it into thirds once more. Repeat this process one more time for a total of three folds. After the final fold, wrap and chill for an additional 30 minutes.

          Shape the Crookies: Preheat your oven to 400°F (200°C). Roll out the dough into a thick rectangle about ½ inch thick. Cut the dough into triangles (base about 5 inches wide). At the base of each triangle, place a spoonful of Nutella (if using), a sprinkle of chocolate chips, and a few chopped hazelnuts.
