2 tablespoons olive oil

1 onion, chopped

3 cloves garlic, minced

1 pound Italian sausage (or ground turkey)

1 can (28 oz) crushed tomatoes

4 cups chicken or vegetable broth

2 teaspoons dried basil

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional)

10-12 fresh lasagna noodles, broken into pieces

2 cups stuffed tortellini (fresh or frozen)

2 cups baby spinach, roughly chopped

Salt and pepper to taste

1 cup ricotta cheese

1 cup shredded mozzarella cheese

Fresh basil leaves for garnish

Instructions
 

In a large pot, heat olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent, about 3-4 minutes.

    Increase the heat to medium-high, and add the Italian sausage. Cook until browned and cooked through, about 5-7 minutes, breaking it apart with a wooden spoon as it cooks.

      Stir in the crushed tomatoes, broth, dried basil, oregano, and red pepper flakes (if using). Bring the mixture to a gentle boil.

        Once boiling, add the broken lasagna noodle pieces and tortellini to the pot. Reduce the heat to a simmer and let cook for about 10-12 minutes, or until the noodles and tortellini are tender.

          Stir in the chopped spinach and cook for an additional 2-3 minutes until wilted. Season with salt and pepper to taste.

            In a separate bowl, combine ricotta cheese and half of the mozzarella cheese.

              To serve, ladle the soup into bowls and top each serving with a dollop of the ricotta mixture and a sprinkle of the remaining mozzarella cheese.

                Garnish with fresh basil leaves for a burst of flavor and color.
