4 slices of thick bread (such as sourdough or ciabatta)

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 cup marinara sauce (plus extra for dipping)

1 teaspoon dried oregano

1 teaspoon garlic powder

1 tablespoon fresh basil, chopped (or 1 teaspoon dried)

2 tablespoons butter

Salt and pepper to taste

Instructions
 

In a mixing bowl, combine the ricotta cheese, half of the mozzarella cheese, Parmesan cheese, oregano, garlic powder, and fresh basil. Season with salt and pepper, and mix until smooth.

    To assemble the sandwich, take two slices of bread. Spread a generous layer of the ricotta mixture on both slices.

      Spoon about 1/4 cup of marinara sauce onto one slice and spread it evenly. Top with the remaining mozzarella cheese and place the other slice on top to form a sandwich.

        Heat a non-stick skillet over medium heat and add 1 tablespoon of butter. Once melted, place the sandwich in the skillet. Grill for 3-4 minutes on one side until golden brown.

          Carefully flip the sandwich and add the remaining butter to the skillet. Grill the other side for another 3-4 minutes, pressing down slightly with a spatula, until the cheese is melted and both sides are crispy.

            Remove the sandwich from the skillet and slice it in half. Serve hot with extra marinara sauce on the side for dipping.
