3 tablespoons soy sauce

2 tablespoons brown sugar

1 tablespoon sesame oil

2 cloves garlic, minced

1-inch piece ginger, grated

1 tablespoon gochujang (Korean chili paste)

1 teaspoon black pepper

2 green onions, chopped

1 cup shredded carrots

1 cup cooked white rice (or brown rice for healthier option)

1 tablespoon sesame seeds for garnish

Optional: sautéed spinach or bok choy for serving

Instructions
 

In a large skillet or wok, heat the sesame oil over medium-high heat.

    Add minced garlic and grated ginger, sautéing for about 30 seconds until fragrant.

      Increase the heat to high and add the ground beef. Cook, breaking it apart, until browned and fully cooked (about 5-7 minutes).

        Stir in the soy sauce, brown sugar, gochujang, and black pepper. Cook for an additional 2-3 minutes, allowing the flavors to combine and the sauce to thicken slightly.

          Fold in the shredded carrots and half of the chopped green onions, cooking for 1-2 minutes until the carrots are slightly tender but still crunchy.

            Serve the beef mixture over a bed of cooked rice in bowls.

              Garnish each bowl with remaining green onions and a sprinkle of sesame seeds.

                If desired, serve with sautéed spinach or bok choy on the side for added nutrition.
