2 large russet potatoes, peeled and grated

1 medium onion, finely chopped

1 cup shredded mozzarella cheese

1/4 cup all-purpose flour

1 large egg

2 green onions, finely sliced

1 teaspoon garlic powder

Salt and pepper to taste

Vegetable oil (for frying)

Instructions
 

Start by grating the peeled potatoes and place them in a clean kitchen towel. Squeeze out as much moisture as possible from the grated potatoes.

    In a large mixing bowl, combine the drained grated potatoes, chopped onion, shredded mozzarella cheese, flour, egg, green onions, garlic powder, salt, and pepper. Mix everything thoroughly until well incorporated.

      Heat about 1/4 inch of vegetable oil in a non-stick skillet over medium heat.

        Once the oil is hot, take a spoonful of the potato mixture and flatten it into a pancake shape (about 1/2 inch thick) in the skillet. You can adjust the size based on your preference.

          Cook each pancake for about 4-5 minutes on one side until golden brown, then flip and cook for an additional 4-5 minutes on the other side.

            Move the cooked pancakes to a paper towel-lined plate to drain excess oil. Repeat until all the mixture is used.

              Serve the pancakes hot, paired with a dipping sauce made of soy sauce, a dash of sesame oil, and a sprinkle of sesame seeds (optional).
