4 large bell peppers (any color)

1 pound kielbasa, diced

1 cup cooked quinoa (or rice)

1 cup diced tomatoes (canned or fresh)

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon smoked paprika

1/2 teaspoon black pepper

1 cup shredded cheese (cheddar or mozzarella)

2 tablespoons olive oil

1 tablespoon fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Peppers: Slice the tops off the bell peppers and remove the seeds. Place them upright in a baking dish.

      Cook the Filling: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, cooking until softened (about 3-4 minutes).

        Add Kielbasa: Incorporate the diced kielbasa and continue to cook until browned (about 5-7 minutes).

          Mix in Other Ingredients: Stir in the cooked quinoa, diced tomatoes, smoked paprika, and black pepper. Cook for an additional 2-3 minutes, allowing the mixture to meld together.

            Stuff the Peppers: Remove the skillet from heat and stir in half of the shredded cheese. Fill each bell pepper with the kielbasa mixture, packing it down gently to ensure they are filled generously.

              Top with Cheese: Sprinkle the remaining cheese on top of each stuffed pepper.

                Bake: Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes, or until the peppers are tender and the cheese is bubbly.

                  Garnish: Once cooked, take them out of the oven and let them cool slightly. Garnish with chopped parsley before serving.
