Ingredients
  

2 medium zucchinis, shredded

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 large egg

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

Salt and pepper to taste

Olive oil spray for greasing

Instructions
 

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    In a large bowl, combine the shredded zucchini with a pinch of salt. Let it sit for about 10 minutes to draw out excess moisture.

      After 10 minutes, use a clean kitchen towel to squeeze out as much moisture as possible from the zucchini.

        In the same bowl, add shredded mozzarella, grated Parmesan, egg, garlic powder, onion powder, dried oregano, salt, and pepper. Mix everything until well combined.

          Form the mixture into small patties, about 1-2 inches in diameter, and place them on the prepared baking sheet.

            Lightly spray the tops of the zucchini bites with olive oil to encourage browning.

              Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy.

                Allow to cool slightly before serving.
