Instructions
Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper.
In a large mixing bowl, combine the cauliflower florets with olive oil, ensuring they are well coated.
In another bowl, mix the almond flour, garlic powder, onion powder, smoked paprika, salt, and black pepper.
Add the almond flour mixture to the cauliflower and toss until all florets are evenly coated.
Spread the coated cauliflower bites across the prepared baking sheet in a single layer. Bake for 20-25 minutes or until golden and crispy, flipping halfway through baking.
While the cauliflower is baking, combine the melted butter and buffalo sauce in a small bowl.
Once the cauliflower is done baking, remove it from the oven and place it in a large bowl. Drizzle the buffalo sauce mixture over the bites and toss well until all are evenly coated.
Return the sauced cauliflower to the baking sheet and bake for an additional 10-15 minutes until the sauce caramelizes and the bites are crispy.
Remove from the oven and garnish with fresh chopped parsley.
