2 tablespoons green tea leaves (Kashmiri tea leaves if available)

4 cups water

1 teaspoon baking soda

1 cup whole milk

1/2 cup heavy cream

4-5 tablespoons sugar (adjust to taste)

A pinch of salt

1/2 teaspoon cardamom powder

Chopped pistachios and almonds for garnish

1-2 whole cloves (optional)

A pinch of saffron strands (optional for added aroma)

Instructions
 

In a large saucepan, bring 4 cups of water to a boil.

    Add the green tea leaves and baking soda to the boiling water. The baking soda helps in developing the pink color.

      Reduce the heat and let it simmer for about 10-15 minutes, stirring occasionally. You'll notice the color darkening initially.

        Continue simmering while whisking the tea vigorously for a few minutes (this aeration process is essential for developing the pink color).

          Once the tea has turned a deep reddish-brown, strain it into a separate pot, discarding the tea leaves and foam.

            Add the milk, heavy cream, sugar, and a pinch of salt to the strained tea. Stir well to combine.

              Increase the heat and bring the mixture to a gentle boil. Let it simmer for about 5-7 minutes until it reaches your desired strength.

                Stir in the cardamom powder and adjust sweetness if needed. If you’re using saffron and cloves, add them in this step for enhanced flavor.

                  Remove from heat and whisk the chai one last time to incorporate air, making it frothy.

                    Pour the chai into serving cups and garnish with chopped pistachios and almonds.
