Ingredients
  

2 cups long-grain parboiled rice

1/4 cup vegetable oil

1 large onion, chopped

2 cloves garlic, minced

1 red bell pepper, chopped

1 green bell pepper, chopped

4 ripe tomatoes, blended into a smooth paste

1 cup vegetable broth

1 tablespoon tomato paste

1 teaspoon thyme

1 teaspoon curry powder

1 teaspoon paprika

1 bay leaf

1 cup mixed vegetables (carrots, peas, and corn)

Salt and pepper to taste

Optional: 1 cup cooked chicken or shrimp for protein

Instructions
 

Rinse the rice thoroughly under cold water until the water runs clear. Drain and set aside.

    In a large pot, heat the vegetable oil over medium heat. Add the chopped onions and sauté until they are translucent.

      Stir in the minced garlic and chopped red and green bell peppers, cooking for an additional 3-4 minutes until fragrant.

        Add the blended tomato paste to the pot along with the tomato paste, thyme, curry powder, paprika, and bay leaf. Simmer for about 10 minutes, stirring occasionally until the sauce thickens.

          Pour in the vegetable broth and bring the mixture to a boil. Season with salt and pepper.

            Add the rinsed rice to the pot, stirring to combine it well with the tomato sauce.

              Cover the pot with a tight-fitting lid and reduce the heat to low. Allow the rice to cook for about 20-25 minutes without removing the lid.

                After 25 minutes, add the mixed vegetables and any optional protein (chicken or shrimp) on top of the rice. Re-cover the pot and steam for an additional 10 minutes.

                  Once the rice is tender and has absorbed the sauce, remove the pot from heat. Let it sit for 5 minutes, then fluff the rice with a fork.

                    Serve hot, garnished with more chopped bell peppers or fresh herbs if desired.
