Ingredients

1 lb ground beef (or ground turkey)

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

1 large egg

2 teaspoons garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper to taste

1/2 cup cream cheese, softened

1/4 cup pickled jalapenos, diced (adjust for heat preference)

1/4 cup shredded cheddar cheese

1 tablespoon olive oil

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

Prepare the Meatball Mixture: In a large mixing bowl, combine the ground beef, breadcrumbs, Parmesan cheese, egg, garlic powder, onion powder, paprika, salt, and pepper. Use your hands to mix until everything is well combined.

Make the Jalapeno Stuffing: In another bowl, mix together the softened cream cheese, diced jalapenos, and shredded cheddar cheese until well blended.

Shape the Meatballs: Take a handful of the meatball mixture (about the size of a golf ball) and flatten it in your hand. Place a small spoonful of the jalapeno cream cheese mixture in the middle, then fold the meat around it, sealing the cheese inside. Roll it into a ball shape and place it on the prepared baking sheet. Repeat until all the mixture is used.

Bake the Meatballs: Drizzle olive oil over the meatballs and place them in the preheated oven. Bake for 20-25 minutes, or until they are cooked through and well browned on the outside.

Serve: Once baked, let the meatballs rest for a few minutes. Serve them with toothpicks and your favorite dipping sauce (such as ranch or spicy mayo) for an extra kick.

              Prep Time: 20 minutes | Total Time: 45 minutes | Servings: 4-6
