2 tablespoons olive oil

Prepare the Potatoes: Place the baby potatoes in a large pot and cover with cold water. Add a generous pinch of salt and bring to a boil. Cook for about 15-20 minutes or until the potatoes are fork-tender. Drain the potatoes and set aside to cool slightly.

    Mash the Potatoes: Once the potatoes are cool enough to handle, place them in a large bowl. Use a potato masher or fork to gently smash the potatoes, leaving them a bit chunky for texture.
