1 cup fresh corn kernels (or frozen, thawed)

1 medium jalapeño, finely chopped (seeds removed for less heat)

1/2 cup all-purpose flour

1/2 teaspoon baking powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon cayenne pepper (adjust for spice preference)

1/2 cup cornmeal

1/4 cup green onions, sliced

1/4 cup shredded cheddar cheese (optional)

1/2 cup buttermilk (or regular milk with 1 teaspoon vinegar)

Vegetable oil, for frying

Instructions
 

In a large bowl, combine the fresh corn kernels, chopped jalapeño, and green onions. If using, stir in the shredded cheddar cheese.

    In another bowl, whisk together the flour, baking powder, salt, black pepper, and cayenne pepper until well mixed.

      Pour the dry ingredients into the bowl with the corn mixture. Stir until combined, but do not overmix.

        Add the buttermilk and mix until the batter is moist. The dough should be thick and able to hold its shape.

          In a large skillet, heat about 1/4 inch of vegetable oil over medium-high heat. To test if the oil is ready, drop a small spoonful of batter into the oil; it should sizzle and rise to the surface.

            Using a tablespoon or small ice cream scoop, drop spoonfuls of the fritter batter into the hot oil, spaced apart to avoid sticking. Fry in batches to not overcrowd the skillet.

              Cook for about 2-3 minutes on each side or until golden brown and crispy. Remove fritters and drain on a paper towel-lined plate.

                Repeat the process until all batter is fried.
