3-4 lbs beef chuck roast

2 tablespoons olive oil

2 onions, sliced

4 cloves garlic, minced

2 carrots, chopped

2 stalks celery, chopped

1 can (14 oz) crushed tomatoes

2 cups beef broth

1 tablespoon balsamic vinegar

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions
 

Preheat your oven to 325°F (160°C).

    In a large Dutch oven, heat the olive oil over medium-high heat. Season the beef roast generously with salt and pepper.

      Sear the roast in the hot oil for about 4-5 minutes on each side until browned. Remove the roast and set aside.

        In the same pot, add sliced onions, garlic, carrots, and celery. Sauté for about 5-7 minutes until softened and fragrant.

          Pour in the crushed tomatoes, beef broth, and balsamic vinegar, stirring to combine.

            Return the roast to the pot, nestling it in the vegetable mixture. Sprinkle the oregano and thyme over the top.

              Cover the pot tightly and transfer it to the oven. Cook for 3-4 hours, until the beef is tender and easily shredded with a fork.

                Once done, remove the pot from the oven and let it rest for a few minutes before slicing, or shred the meat for serving.

                  Serve warm, ladling the delicious sauce and vegetables over the meat, and garnish with fresh basil leaves.
