4 chicken thighs, bone-in and skin-on

2 tablespoons olive oil

1 teaspoon Italian seasoning

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon red pepper flakes (adjust to taste)

1 cup cherry tomatoes, halved

1 cup bell peppers, sliced (use a mix of colors)

½ cup fresh basil, chopped

Salt and pepper to taste

Juice of 1 lemon

Grated Parmesan cheese for topping

Preheat your oven to 400°F (200°C).

    In a large mixing bowl, combine olive oil, Italian seasoning, garlic powder, onion powder, red pepper flakes, salt, and pepper.

      Add the chicken thighs to the bowl and toss until they are evenly coated with the seasoning mixture.

        In a baking dish, arrange the seasoned chicken thighs, skin side up, ensuring they don't overlap.

          Scatter the halved cherry tomatoes and sliced bell peppers around the chicken in the dish.

            Squeeze the lemon juice over the chicken and vegetables for a zesty flavor.

              Bake in the preheated oven for 35-40 minutes or until the chicken reaches an internal temperature of 165°F (75°C) and the skin is crispy and golden.

                Optional: During the last 5 minutes of baking, sprinkle grated Parmesan cheese over the chicken for an extra layer of flavor.

                  Remove from the oven, let it rest for 5 minutes, and then sprinkle with fresh basil just before serving.
