2 cups mashed potatoes (prepared and cooled)

1 cup shredded cheddar cheese

1/2 cup grated Parmesan cheese

1/4 cup green onions, finely chopped

1 large egg

1 teaspoon garlic powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

1 cup breadcrumbs (for coating)

Oil for frying

In a large mixing bowl, combine the cooled mashed potatoes, cheddar cheese, Parmesan cheese, green onions, egg, garlic powder, smoked paprika, salt, and pepper. Mix well until all ingredients are thoroughly blended and the mixture is smooth.

    Using your hands, scoop out about 1 tablespoon of the potato mixture and form it into a small ball or puff shape. Continue until all the mixture is shaped into puffs.

      Place the breadcrumbs in a shallow dish. Roll each potato puff in the breadcrumbs until evenly coated. Set aside on a plate as you prepare the rest.

        In a large skillet, heat about 1/2 inch of oil over medium heat. To test if the oil is hot enough, drop a small piece of the mix into the oil; it should sizzle.

          Carefully add the potato cheese puffs to the hot oil, being cautious not to overcrowd the pan. Fry for about 3-4 minutes on each side, or until golden brown and crispy.

            Once cooked, transfer the puffs to a plate lined with paper towels to absorb excess oil.

              Serve warm as a delightful appetizer, with your choice of dipping sauce such as ranch, garlic aioli, or a spicy ketchup.
