Ingredients

2 fresh ciabatta rolls

1 ball of burrata cheese

1 cup cherry tomatoes, halved

1 tablespoon olive oil

1 teaspoon balsamic glaze

1 clove garlic, minced

Fresh basil leaves, for garnish

Salt and pepper to taste

1/4 teaspoon red pepper flakes (optional)

Instructions

Prepare the Sweet Cherry Tomato Confit:

    - In a small saucepan, combine the halved cherry tomatoes, olive oil, minced garlic, and red pepper flakes (if using).

      - Cook over medium-low heat for about 15-20 minutes, stirring occasionally, until the tomatoes are softened and the mixture is slightly caramelized. Season with salt and pepper to taste, then remove from heat.

        Toast the Ciabatta Rolls:

          - While the tomato confit is cooking, preheat a skillet or grill pan over medium heat.

            - Slice the ciabatta rolls in half and toast them lightly on the skillet for 2-3 minutes on each side until they are crispy and golden brown.

              Assemble the Sandwich:

                - Spread a generous amount of the tomato confit on the bottom half of each ciabatta roll.

                  - Gently tear the burrata cheese into portions and place it on top of the confit.

                    - Drizzle with balsamic glaze and sprinkle with fresh basil leaves.

                      Finish the Sandwich:

                        - Close the sandwich with the top half of the ciabatta roll. For a warm and melty texture, you can press the sandwich gently in the skillet for an additional minute until the burrata starts to soften further.

                          Serve:

                            - Cut the sandwich in half to reveal the creamy burrata and luscious tomato confit. Serve immediately while warm, with extra basil on the side for garnish.
