4 large Yukon gold potatoes, peeled and cubed

1 cup sharp cheddar cheese, grated

½ cup cream cheese, softened

¼ cup unsalted butter, melted

1 small onion, finely chopped

2 cloves garlic, minced

1 cup cooked corned beef, chopped (optional for a meaty twist)

1 teaspoon dried thyme

Salt and pepper to taste

1 pre-prepared pie crust (store-bought or homemade)

1 egg, beaten (for egg wash)

Boil the Potatoes: In a large pot, bring salted water to a boil. Add the cubed Yukon gold potatoes and cook until tender, about 15-20 minutes. Drain and let them cool slightly.

    Sauté Onion and Garlic: In a skillet, melt a tablespoon of butter over medium heat. Add the chopped onion and garlic, sautéing until translucent and fragrant, about 3-4 minutes. Set aside to cool.

      Mash the Potatoes: In a mixing bowl, combine the boiled potatoes, cream cheese, melted butter, and half of the grated cheddar cheese. Mash until smooth and creamy.

        Mix in the Rest of the Ingredients: Add the sautéed onion and garlic, cooked corned beef (if using), dried thyme, salt, and pepper to the mashed potatoes. Mix until all ingredients are fully incorporated.

          Prepare the Pie: Preheat your oven to 375°F (190°C). Press the pie crust into a 9-inch pie dish. Fill the crust with the potato mixture, smoothing it out evenly. Top with the remaining cheddar cheese.

            Brush with Egg Wash: Use a brush to apply the beaten egg over the edges of the pie crust to give it a beautiful golden brown finish when baked.

              Bake the Pie: Place the pie in the preheated oven and bake for 25-30 minutes until the cheese is bubbly and the crust is golden brown.

                Cool and Serve: Allow the pie to cool for about 10 minutes before slicing and serving. Enjoy it warm!
