2 lbs russet potatoes, peeled and cubed

1 cup shredded green cabbage

1 cup kale, chopped

1/2 cup green onions, thinly sliced

1/2 cup heavy cream

1/4 cup unsalted butter

Salt and pepper to taste

1/2 teaspoon nutmeg (for a warm flavor twist)

1/4 cup crispy bacon bits (optional for extra flavor)

Fresh herbs for garnish (like parsley or chives)

Instructions
 

Boil the Potatoes: In a large pot, add the cubed potatoes and cover with cold water. Bring to a boil and cook until tender, about 15-20 minutes.

    Prepare the Greens: While the potatoes are cooking, in a separate pan, melt half of the butter over medium heat. Add the shredded cabbage and chopped kale, sautéing until wilted and slightly browned, about 5-7 minutes. Add the sliced green onions in the last minute of cooking.

      Mash the Potatoes: Drain the cooked potatoes and return them to the pot. Add heavy cream, remaining butter, and nutmeg. Mash the potatoes until smooth and creamy, adjusting the cream for desired consistency.

        Combine: Gently fold the sautéed greens into the mashed potatoes. Mix until evenly combined. Season with salt and pepper to taste. If using, fold in the crispy bacon bits for an extra flavor punch.

          Serve: Spoon the colcannon into a serving dish. Create a small well in the center and place a pat of butter for added richness.
