4 slices of thick-cut Irish bacon, chopped

1 medium onion, diced

2 cloves garlic, minced

4 medium potatoes, peeled and diced

1 small head of green cabbage, chopped

4 cups chicken broth (low-sodium)

1 cup heavy cream

1 tablespoon olive oil

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

In a large pot, heat the olive oil over medium heat. Add the chopped bacon and cook until crispy, about 5-7 minutes. Use a slotted spoon to remove the bacon and place it on a paper towel-lined plate to drain excess fat.

    In the same pot with the rendered bacon fat, add the diced onion and sauté for 3-4 minutes until softened. Stir in the minced garlic and cook for an additional minute until fragrant.

      Add the diced potatoes to the pot and pour in the chicken broth. Bring the mixture to a boil, then reduce the heat to a simmer. Cook for 15 minutes, or until the potatoes are tender.

        Stir in the chopped cabbage, dried thyme, and season with salt and pepper. Simmer for another 10 minutes until the cabbage is wilted and tender.

          Remove the pot from heat and stir in the heavy cream for a rich and creamy texture.

            Using an immersion blender, blend about half of the soup (or you can transfer half to a blender), leaving some chunks for texture. Stir back in the reserved crispy bacon.

              Adjust seasoning with additional salt and pepper if needed, and return to gentle heat until warmed through.
