1 pound chicken breast, diced

2 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon Italian seasoning

1 teaspoon smoked paprika

Salt and pepper to taste

2 cups chicken broth

12 ounces penne pasta

1 cup heavy cream

1 cup cherry tomatoes, halved

1 cup fresh spinach

½ cup grated Parmesan cheese

Fresh basil leaves, for garnish

Sauté the Chicken: Set your Instant Pot to the “Sauté” function. Add olive oil and diced chicken breast. Season with salt, pepper, onion powder, Italian seasoning, and smoked paprika. Sauté for about 5-7 minutes until the chicken is browned and cooked through. Remove the chicken and set aside.

    Cook Garlic: In the same pot, add minced garlic and cook for 30 seconds until fragrant, stirring frequently to avoid burning.

      Add Broth and Pasta: Pour in the chicken broth, scraping the bottom of the pot to deglaze. Add the penne pasta, ensuring it is submerged in the broth, then return the cooked chicken to the pot.

        Pressure Cook: Close the Instant Pot lid and set the steam release value to “Sealing.” Cook on “Manual” or “Pressure Cook” mode for 5 minutes. Once done, let the pressure release naturally for 5 minutes before performing a quick release for any remaining pressure.

          Stir in Cream and Veggies: Open the lid and stir in the heavy cream, cherry tomatoes, and spinach. Let it sit for a minute until the spinach wilts. Then, sprinkle in grated Parmesan cheese and stir until well combined.

            Adjust Seasoning: Taste and adjust seasoning as needed with additional salt and pepper.

              Serve: Spoon the creamy Tuscan chicken pasta into bowls, garnishing with fresh basil leaves and extra Parmesan cheese if desired.
