3-4 lbs beef chuck roast

2 tablespoons olive oil

4 cloves garlic, minced

1 onion, chopped

4 carrots, cut into 2-inch pieces

3 stalks celery, cut into 2-inch pieces

1 cup beef broth

2 tablespoons Worcestershire sauce

2 tablespoons tomato paste

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

Sear the Roast: Set your Instant Pot to the sauté mode and heat the olive oil. Pat the beef chuck roast dry with paper towels, season it generously with salt and pepper, and brown it on all sides in the hot oil (about 3-4 minutes per side). Remove the roast and set aside.

    Sauté Aromatics: In the same pot, add the chopped onion and sauté for about 2-3 minutes until translucent. Add the minced garlic and cook for an additional minute until fragrant.

      Deglaze: Pour in the beef broth and scrape the bottom of the pot with a wooden spoon to deglaze, removing any browned bits. This adds depth to your flavor.

        Add Ingredients: Stir in the Worcestershire sauce, tomato paste, thyme, and rosemary. Mix until well combined.

          Reintroduce the Roast: Place the seared chuck roast back into the pot, making sure it’s nestled in the liquid. Arrange the carrots and celery around the roast.
