2 cups elbow macaroni

4 cups vegetable broth

1 tablespoon butter

3 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon salt (adjust to taste)

1/2 teaspoon black pepper

1 1/2 cups sharp cheddar cheese, shredded

1/2 cup Parmesan cheese, grated

1/2 cup heavy cream

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté Aromatics: Turn the Instant Pot to the sauté mode. Add the butter and minced garlic, and cook for about 1-2 minutes until fragrant, stirring frequently.

    Add Pasta and Broth: Add the elbow macaroni to the pot along with the vegetable broth, onion powder, smoked paprika, salt, and black pepper. Stir to combine.

      Pressure Cook: Close the Instant Pot lid and ensure the vent is set to sealing. Cook on high pressure for 4 minutes. After the cooking time is complete, do a quick release of the pressure.

        Stir in Cheeses: Open the lid carefully. Stir the pasta mixture, and then gradually add the shredded cheddar cheese and grated Parmesan cheese. Mix until the cheeses are melted and creamy.

          Add Cream: Pour in the heavy cream and stir until well incorporated, adjusting the creaminess to your preference.

            Final Taste: Taste and adjust seasoning if necessary, adding more salt or pepper as needed.

              Serve: Spoon the mac & cheese into serving bowls.
