2 tablespoons unsalted butter

4 cups chicken or vegetable broth

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

1/4 teaspoon cayenne pepper (optional, for heat)

2 cups shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1/2 cup cream cheese, softened

Salt and pepper to taste

Fresh parsley, chopped for garnish

Prepare the Instant Pot: Begin by setting your Instant Pot to the sauté mode. Add the unsalted butter and let it melt.

    Sauté: Once the butter has melted, add the elbow macaroni, stirring it briefly to lightly toast it for about 1-2 minutes. This adds an extra nuttiness to the pasta.

      Add Liquids & Seasoning: Pour in the chicken or vegetable broth, and sprinkle in the garlic powder, onion powder, paprika, and cayenne pepper if using. Stir to combine, ensuring the pasta is submerged in liquid.

        Cook in Instant Pot: Seal the Instant Pot lid, set the valve to sealing, and cook on manual (high pressure) for 4 minutes. Once cooking is done, allow for a natural release for about 4-5 minutes, then carefully quick-release any remaining pressure.

          Mix in Cheese: Open the lid and stir the pasta. Add the shredded cheddar and mozzarella cheeses along with the softened cream cheese. Mix until everything is melted and creamy. If the mac and cheese is too thick, add a splash more broth or milk to reach your desired consistency.
