Instructions
Set your Instant Pot to Sauté mode. Add olive oil and heat for a minute.
Add the diced onion and sauté until translucent, about 3-4 minutes.
Stir in minced garlic and cook for another 1-2 minutes until fragrant.
Add chopped sun-dried tomatoes, dried basil, dried oregano, and red pepper flakes (if using). Stir everything together until well combined.
Pour in the vegetable broth and add the pasta. Ensure the pasta is submerged in the liquid.
Seal the Instant Pot lid and set to Manual pressure for 5 minutes.
Once the cooking time is up, perform a quick release of the pressure carefully.
Stir in the heavy cream, spinach, and grated Parmesan cheese until the spinach wilts and everything is creamy.
Season with salt and pepper to taste and mix well.
Let it sit for a couple of minutes to thicken before serving.
Notes
Serve in bowls topped with additional grated Parmesan and a sprinkle of fresh basil for an aromatic touch.
