1 cup long-grain white rice

4 cups water, divided

1 cup almond milk (or your preferred plant milk)

2 tablespoons ground cinnamon

1 cup strong brewed coffee, cooled

1/2 cup sweetened condensed milk (or to taste)

1 teaspoon vanilla extract

1/4 teaspoon salt

Instructions
 

Rinse the rice under cold water for about 2-3 minutes, then drain.

    In a blender, combine the rinsed rice, 2 cups of water, ground cinnamon, and salt. Blend until the rice is finely ground and mixture is creamy.

      Pour the rice mixture into a large bowl and add the remaining 2 cups of water. Cover and let it sit for about 4 hours or overnight in the fridge to infuse the flavors.

        After soaking, strain the mixture through a fine mesh sieve or cheesecloth into a pitcher, discarding the rice solids.

          To the strained liquid, stir in the almond milk, strong brewed coffee, sweetened condensed milk, and vanilla extract until well combined. Adjust sweetness to taste.

            Chill in the refrigerator for at least 30 minutes before serving.

              Serve over ice in tall glasses, and sprinkle with an additional dash of ground cinnamon if desired.
