Ingredients

1 pound large shrimp, peeled and deveined

1 cup walnuts

1/2 cup all-purpose flour

1/2 cup cornstarch

1 teaspoon baking powder

1 large egg, beaten

1 cup water

1/2 teaspoon salt

1/2 teaspoon black pepper

1/4 cup mayonnaise

1/4 cup honey

1 teaspoon lemon juice

2 tablespoons vegetable oil for frying

Chopped green onions for garnish

Instructions

Prepare the Walnuts: In a small saucepan, bring water to a boil. Add walnuts and boil for 3 minutes. Drain and rinse under cold water. In the same saucepan, add enough sugar to cover the walnuts and 1/2 cup of water. Cook over medium heat until sugar has dissolved and walnuts soak up the syrup. This should take about 4-5 minutes. Drain and set aside on a parchment-lined plate to harden.

Make the Batter: In a mixing bowl, whisk together flour, cornstarch, baking powder, salt, and pepper. In another bowl, combine the beaten egg, water, and mix well. Combine the wet and dry ingredients to create a smooth batter.

Coat the Shrimp: Dip each shrimp into the batter, ensuring they are well coated.

Fry the Shrimp: In a large skillet, heat vegetable oil over medium-high heat. Once hot, carefully place the battered shrimp into the pan, being sure not to overcrowd. Fry until golden brown, about 2-3 minutes on each side. Remove and drain on paper towels.

Prepare the Sauce: In a small bowl, mix together mayonnaise, honey, and lemon juice to create a creamy honey sauce.

Combine and Serve: In a serving bowl, toss the fried shrimp with the creamy honey sauce until evenly coated. Gently add the candied walnuts and mix together to combine.

Garnish and Present: Transfer the shrimp to a serving dish, and garnish with chopped green onions for a pop of color.
