1 pound large shrimp, peeled and deveined

1 cup walnuts

1/2 cup all-purpose flour

1/2 cup cornstarch

1 teaspoon baking powder

1 large egg, beaten

1 cup water

1/2 teaspoon salt

1/4 cup mayonnaise

1/4 cup honey

1 teaspoon lemon juice

2 tablespoons vegetable oil for frying

Prepare the Walnuts: In a small saucepan, bring water to a boil. Add walnuts and boil for 3 minutes. Drain and rinse under cold water. In the same saucepan, add enough sugar to cover the walnuts and 1/2 cup of water. Cook over medium heat until sugar has dissolved and walnuts soak up the syrup. This should take about 4-5 minutes. Drain and set aside on a parchment-lined plate to harden.
