HONEY ROASTED CARROTS

Ingredients
  

1 lb baby carrots, peeled and trimmed

2 tablespoons honey

2 tablespoons olive oil

Zest and juice of 1 orange

1 tablespoon balsamic vinegar

1 teaspoon ground cinnamon

Salt and pepper to taste

Fresh parsley or thyme for garnish

Instructions
 

Preheat your oven to 425°F (220°C).

    In a large bowl, whisk together the honey, olive oil, orange zest, orange juice, balsamic vinegar, cinnamon, salt, and pepper to create a glaze.

      Add the baby carrots to the bowl, tossing them well to coat evenly with the glaze.

        Spread the glazed carrots in a single layer on a baking sheet lined with parchment paper for easy cleanup.

          Roast in the preheated oven for 20-25 minutes, stirring halfway through, until the carrots are tender and caramelized, slightly crisp on the edges.

            Once roasted, remove from the oven and let cool for a few minutes.

              Transfer the carrots to a serving platter and sprinkle fresh parsley or thyme on top for a pop of color and flavor.
