1 cup fresh pineapple, diced

1/4 cup honey

2 tablespoons soy sauce (low sodium)

2 cloves garlic, minced

1 tablespoon ginger, grated

1 tablespoon olive oil

Salt and pepper to taste

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Instructions
 

In a medium bowl, mix together honey, soy sauce, minced garlic, and grated ginger to create a marinade.

    Add the diced fresh pineapple to the marinade and stir to combine.

      Season the salmon fillets with salt and pepper on both sides.

        In a large skillet, heat olive oil over medium-high heat.

          Once the skillet is hot, place the salmon fillets skin-side down. Cook for about 4-5 minutes, until the skin is crispy.

            Carefully flip the salmon fillets over and pour the honey-pineapple marinade, along with the diced pineapple, directly onto the fillets.

              Reduce the heat to medium and cook for an additional 4-5 minutes, basting the salmon with the marinade occasionally. The salmon should be cooked through and glaze should be slightly thickened.

                Remove the skillet from heat and let the salmon rest for a couple of minutes before serving.

                  Garnish with chopped green onions and sesame seeds before serving.
