Ingredients

2 salmon fillets (about 6 oz each)

2 tablespoons honey

1 lime, juiced and zested

2 tablespoons olive oil

1 clove garlic, minced

1 teaspoon ground cumin

1/2 teaspoon chili powder

Salt and pepper to taste

1/4 cup fresh cilantro, chopped

2 sheets of aluminum foil

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Prepare the Marinade: In a small bowl, whisk together the honey, lime juice, lime zest, olive oil, minced garlic, cumin, chili powder, salt, and pepper until well combined.

Marinate the Salmon: Place the salmon fillets in a shallow dish and pour the marinade over them, ensuring they are well coated. Let them marinate for about 15-20 minutes to absorb the flavors.

Prepare the Foil: Cut two large sheets of aluminum foil, enough to wrap the salmon completely. Lay a portion of chopped cilantro in the center of each sheet.

Add Salmon to Foil: Place one salmon fillet on top of the cilantro on each sheet of foil. Pour any remaining marinade over the salmon.

Wrap Salmon: Carefully fold the edges of the foil up and over the salmon to create a sealed packet, ensuring no leaks.

Bake the Salmon: Place the foil packets on a baking sheet and bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.

Serve: Remove from the oven and carefully unwrap the foil. The steam will escape, so be cautious. Serve the salmon on a plate, garnished with additional cilantro if desired.
