1 lb (450g) boneless, skinless chicken thighs

1/4 cup honey

1/4 cup soy sauce (low-sodium)

3 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 tablespoon apple cider vinegar

1 tablespoon olive oil

Salt and pepper to taste

8 mini slider buns

1 cup coleslaw mix (with or without dressing)

Fresh cilantro or parsley, for garnish

Instructions
 

In a mixing bowl, whisk together the honey, soy sauce, minced garlic, grated ginger, apple cider vinegar, olive oil, salt, and pepper until combined to create a marinade.

    Place the chicken thighs in a resealable plastic bag or dish and pour the marinade over them. Seal the bag or cover the dish and refrigerate for at least 1 hour (or overnight for more flavor).

      Preheat your grill or a skillet over medium-high heat. Remove the chicken from the marinade, letting excess drip off. Discard the remaining marinade.

        Cook the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is golden brown.

          Remove the chicken from heat and let it rest for a few minutes. Then, slice the chicken into thin strips.

            To assemble the sliders, place a slice of chicken on the bottom half of each slider bun, top with coleslaw mix, and finish with the top half of the bun.

              Garnish with fresh cilantro or parsley, if desired. Serve immediately.
