Ingredients

2 cups all-purpose flour

1 cup almond flour

1 cup honey

1/2 cup unsalted butter, softened

3 large eggs

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

2 teaspoons cinnamon powder

1/2 cup milk

2 medium apples, peeled and diced (preferably Granny Smith)

1/2 cup chopped toasted almonds

1/4 cup sliced almonds (for topping)

Optional: powdered sugar for dusting

Instructions

Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.

In a large mixing bowl, cream together the softened butter and honey until light and fluffy.

Add the eggs one at a time, mixing well after each addition.

In a separate bowl, whisk together the all-purpose flour, almond flour, baking powder, baking soda, salt, and cinnamon.

Gradually add the dry ingredients to the wet mixture, alternating with milk. Mix until just combined.

Gently fold in the diced apples and the chopped toasted almonds until evenly distributed.

Pour the batter into the prepared cake pan, smoothing the top with a spatula.

Sprinkle the sliced almonds evenly over the top of the batter for added crunch and decoration.

Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted in the center comes out clean.

Once baked, remove from the oven and allow the cake to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.

Optional: Dust with powdered sugar before serving for an elegant finish.
