1 lb ground beef

1/2 lb ground pork

1 cup breadcrumbs

1/2 cup grated Parmesan cheese

1/4 cup fresh parsley, chopped

1 egg

2 cloves garlic, minced

1 tsp onion powder

1 tsp dried oregano

Salt and pepper to taste

2 cups marinara sauce (homemade or store-bought)

4 sub rolls

1 cup shredded mozzarella cheese

Olive oil for cooking

Instructions
 

In a large mixing bowl, combine the ground beef, ground pork, breadcrumbs, Parmesan cheese, parsley, egg, garlic, onion powder, oregano, salt, and pepper. Mix until just combined; avoid overmixing to keep meatballs tender.

    Preheat your oven to 400°F (200°C).

      Form the meat mixture into golf ball-sized meatballs (about 1.5 inches in diameter) and place them on a baking sheet lined with parchment paper.

        Drizzle a little olive oil over the meatballs to help them brown in the oven.

          Bake the meatballs in the preheated oven for about 20-25 minutes, or until fully cooked through and golden brown, turning halfway for even cooking.

            Meanwhile, heat the marinara sauce in a saucepan over medium heat until simmering.

              Once the meatballs are cooked, carefully add them to the simmering sauce, coating them well. Allow them to simmer together for about 5-7 minutes to absorb flavor.

                Slice the sub rolls open, leaving a hinge, and place on a baking sheet. Spoon several meatballs into each sub roll along with extra marinara sauce.

                  Top each loaded sub with a generous amount of shredded mozzarella cheese.

                    Place the subs in the oven for about 5 minutes, or just until the cheese is melted and bubbly.

                      Serve hot, garnished with a sprinkle of parsley if desired.
