4 boneless, skinless chicken breasts

1 cup grated Parmesan cheese

1 cup panko breadcrumbs

1 teaspoon garlic powder

1 teaspoon Italian seasoning

½ teaspoon paprika

½ teaspoon black pepper

1 cup buttermilk

2 tablespoons Dijon mustard

1 tablespoon olive oil

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

    In a medium bowl, whisk together the buttermilk, Dijon mustard, and a pinch of salt. Add the chicken breasts to the mixture, ensuring they are evenly coated. Marinate for at least 30 minutes (or up to 2 hours) in the refrigerator.

      In another bowl, combine the grated Parmesan cheese, panko breadcrumbs, garlic powder, Italian seasoning, paprika, and black pepper. Mix well.

        Take each marinated chicken breast out of the buttermilk mixture and allow the excess to drip off. Immediately press each breast into the Parmesan breadcrumb mixture, ensuring they are well coated on both sides.

          Place the coated chicken breasts on the prepared baking sheet. Drizzle a bit of olive oil over the tops to ensure they crisp up nicely in the oven.

            Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 74°C) and the coating is golden brown.

              Once done, remove from the oven and let the chicken rest for 5 minutes before slicing.
