Ingredients

1/4 cup extra virgin olive oil

2 tablespoons red wine vinegar (or apple cider vinegar for a twist)

1 tablespoon fresh lemon juice

1 teaspoon Dijon mustard

1 teaspoon honey or maple syrup

1 clove garlic, minced

1 teaspoon dried oregano

Salt and pepper to taste

Instructions

In a small mixing bowl, add the red wine vinegar (or apple cider vinegar), fresh lemon juice, and Dijon mustard. Whisk them together until well combined.

Slowly drizzle in the extra virgin olive oil while whisking continuously to emulsify the mixture.

Add the minced garlic, honey (or maple syrup), and dried oregano to the bowl. Whisk again until all ingredients are incorporated and the dressing is smooth.

Season with salt and pepper to taste, adjusting flavors as needed. If you prefer a sweeter dressing, add a little more honey or maple syrup.

Transfer the vinaigrette to a clean glass jar or bottle and seal it tightly. Let it sit for 15-20 minutes to allow the flavors to meld.
