1 cup cornmeal

1 cup all-purpose flour

1/4 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 cup milk (or buttermilk for extra flavor)

2 large eggs

1/4 cup unsalted butter, melted

1 cup creamed corn

1/2 cup jalapeños, finely chopped (optional for a kick)

1/2 cup shredded cheddar cheese (optional for richness)

Instructions
 

Preheat your oven to 400°F (200°C). Grease a 9-inch square baking dish or skillet with butter or cooking spray.

    In a large mixing bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt until well combined.

      In another bowl, mix the milk, eggs, melted butter, and creamed corn, stirring until smooth. If you’re using jalapeños and cheddar cheese, add them to this mixture.

        Pour the wet ingredients into the dry ingredients, using a spatula to fold everything together gently. Be careful not to overmix; a few lumps are perfectly fine.

          Transfer the batter to the prepared baking dish, spreading it evenly.

            Bake in the preheated oven for 20-25 minutes or until the top is golden brown and a toothpick inserted in the center comes out clean.

              Once done, remove from the oven and allow to cool in the pan for about 10 minutes before slicing.
