Preheat your oven to 375°F (190°C). Grease a 9x9-inch baking dish with a little olive oil or cooking spray.
In a large mixing bowl, whisk together the eggs until well beaten.
Add the cottage cheese to the eggs and mix until fully combined and creamy.
Stir in the chopped spinach, diced bell pepper, onion, cherry tomatoes, garlic powder, paprika, black pepper, and salt. Mix well until all ingredients are evenly distributed.
Pour the egg mixture into the prepared baking dish and spread it evenly.
Sprinkle the shredded cheddar cheese on top of the mixture for that delicious cheesy finish.
Bake in the preheated oven for about 25-30 minutes, or until the center is set and the edges are lightly golden. A toothpick inserted in the center should come out clean.
Once cooked, remove the dish from the oven and let it cool for a few minutes.
Garnish with freshly chopped parsley before slicing into squares for serving.
