Ingredients

2 lbs beef tenderloin roast

4 tablespoons unsalted butter, softened

4 cloves garlic, minced

2 tablespoons fresh rosemary, chopped

2 tablespoons fresh thyme, chopped

2 tablespoons fresh parsley, chopped

1 teaspoon salt

1 teaspoon black pepper

2 tablespoons olive oil

1 tablespoon Dijon mustard

Zest of 1 lemon

Instructions

Preheat your oven to 425°F (220°C).

In a small mixing bowl, combine the softened butter, minced garlic, rosemary, thyme, parsley, salt, pepper, Dijon mustard, and lemon zest. Mix well until it forms a smooth herb butter.

Pat the beef tenderloin roast dry with paper towels to ensure a good sear.

Heat the olive oil in a large oven-safe skillet over medium-high heat. Once hot, sear the beef tenderloin on all sides for about 3-4 minutes per side, until it develops a nice brown crust.

Remove the skillet from the heat. Spread the herb butter generously over the seared roast, ensuring it's fully coated.

Transfer the skillet to the preheated oven and roast for 20-25 minutes, or until the internal temperature reaches 135°F (57°C) for medium-rare. Adjust roasting time according to your desired doneness.

Once done, remove the roast from the oven and cover it loosely with aluminum foil. Allow it to rest for 10-15 minutes before slicing. This helps retain the juices.

Slice the tenderloin into medallions and serve hot, drizzled with any leftover herb butter from the skillet.

                  Prep Time: 15 minutes | Total Time: 50 minutes | Servings: 6

                    - Presentation Tips: Serve the sliced beef on a rustic wooden board, garnished with extra fresh herbs and accompanied by roasted vegetables or mashed potatoes for an elegant touch.
