1 large ham bone (with some meat still attached)

6 cups water (or homemade chicken broth)

3 medium potatoes, diced

2 cups green cabbage, chopped

1 medium onion, diced

2 cloves garlic, minced

2 medium carrots, sliced

1 celery stalk, chopped

1 teaspoon dried thyme

1 teaspoon smoked paprika

1 bay leaf

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, add the ham bone and pour in the water (or broth).

    Bring the liquid to a boil over medium-high heat, then reduce the heat to medium-low and let it simmer for about 20 minutes, allowing the flavors to meld.

      Carefully remove the ham bone and set it aside to cool slightly.

        To the pot, add the diced potatoes, chopped cabbage, diced onion, minced garlic, sliced carrots, chopped celery, dried thyme, smoked paprika, and bay leaf. Stir well to combine.

          Shred any remaining meat from the cooled ham bone and add it back into the pot.

            Season the soup with salt and pepper to taste.

              Cover and let the soup simmer for an additional 30-40 minutes, or until the vegetables are tender and the flavors are well combined.

                Remove the bay leaf before serving.

                  Ladle the soup into bowls and garnish with freshly chopped parsley.
